BBQ chicken and blue cheese sandwiches

1 cup (170 g) cooked cold chicken, diced

1/4 cup (60 ml) mayonnaise

1 tbsp (15 ml) spicy barbecue sauce

1 carrot, peeled

1 tbsp (15 ml) lemon juice

2 tsp (10 ml) olive oil

2 kaiser buns with poppy seeds, halved

3 iceberg lettuce leaves, thinly sliced

1 oz (30 g) blue cheese, crumbled

In a bowl, combine the chicken, mayonnaise and barbecue sauce. Season with salt and pepper. Set aside.

With a vegetable peeler, make ribbons with the carrot. Place in a bowl. Add the lemon juice and olive oil. Season with salt and pepper.

Spread the chicken mixture over the bottom of each bun. Garnish with the carrot, lettuce and blue cheese. Close the sandwiches.
